Huki Gullwing?

What would be wrong with mounting a Huki Gullwing (I think that's what its called) or a similar pontoon device to the tippyest Huki, or any other tippy high performance ski, as a beginner so you wouldn't have to start with a lower performance ski and buy another after a while?
I should add that 99% of my surfskiing will be on flat water right in front of my home. Maybe some other type of boat would be better for me.
I'm looking for a sport I can do alternately with rowing so as to strengthen my core in hopes of reducing the frequency of lower back injuries caused by rowing.

current skis: SES Ultra. sculling boats: Fluidesign Lwt, Wintech, Empacher.

Been a little curious as to whether or not the gull wing might actually be a liability in mixed swell/burly chop , i.e. might one "trip" over or catch the wings causing a huli ?
For moderate to less conditions looks like it would work well.
